Marugame Udon is a Japanese chain serving springy, made-fresh udon in hot and cold styles, paired with tempura you pick from the counter. Watch the noodles get portioned and topped as you move down the line. A hot bowl fills you up before a long flight. The sanuki-style noodles are cut and cooked on site, which is why the line moves past an open kitchen.
